Tillys in the Hills.
We created HillTilly Distillery in 2021 on our home property in Upper Sturt. Completely off-grid, our microdistillery runs on solar power and uses Adelaide Hills spring water to create clean, pure spirits made from sunshine and love. Guided by family, a love of gin and respect for nature, we built HillTilly Distillery with sustainability, authenticity and connection to place in mind. Our vision is to create a small, resilient distillery that cares for the planet, supports community and provides an independent future for our family – and to show great spirits can be made with minimal impact and a lot of heart!
Planet. People. Gin.
HillTilly practices sustainability by working in harmony with the natural environment. Our distillery runs entirely on solar power so we operate closely with nature – running the still while the sun is shining and the solar system is generating energy.
We minimise waste wherever possible. Organic waste from production is composted and returned to our food gardens, while cooling water used during distillation is captured and reused rather than wasted.
We grow and harvest our own grapes for the base spirit of our gins and vodkas and agave for our premium Agave Spirit. We also forage many of the botanicals used in our gins locally from our property, neighbourhood and from fellow market stall holders, keeping ingredients local and seasonal.
